Recipe - sorta fancy grilled cheese

You can do this so many different ways.  It's quick, flexible, a little surprising, and usually delish and compliment-getting.  Start with a slice of any bread; spread with any mustard or something similarly sharp (optional, but nice); spread with something sweet (generally jam, but any honey or maple syrup, for example); top with any cheese; top that with any savory (smoked meats are nice, smoked veg is, too, but anything that gives a salty/spicy contrast: olives, anchovies, pickles, cole slaw, lox, ham, sauteed mushroom, or some nice etcetera).  Top with another slice of bread with mustard and grill, or grill open face under a broiler.

I made two tonight, open face, both with some home made pluot jam and cheddar on a bagel; one with bacon, one with salami, both with sliced pepperoncini.  Lest you - as one tonight did - think the savory/sweet combination is weird, think of these: croque monsiour; barbecue sauce on meat; sweet and sour sauce with shrimp, chicken, or pork; catsup on hamburger; agrodolces; honey mustard dressing, pineapple on ham (or both on pizza), peanut butter with jelly...
